Chili Cook-Off [competition
in Houston Texas]
The chili we made with the
LeanAndTender™ grass-fed Texas Longhorn Beef was very popular with the
crowd! We had many people coming up to our booth saying they had heard
we had some great chili and asking for a sample!
We were rated second in our
preliminary group … with a score of 56, 3 behind the first place chili
with 59. Unfortunately, the final set of judges must not have liked
our chili as well. We slipped to 6th place overall with a score of 48.
Interestingly enough, our preliminary score of 56 would have been good
enough to win overall, but we lost 8 points in the final round. The
3rd place chili in the second group won in the final round, which is
why I say the judging was a bit strange.
Anyway, we used 6 of the
eight pounds last Friday to make 1-1/2 gallons of chili, which was
gone by noon, and the other 2 pounds to make another batch last night,
just for us. It was excellent!
We’ll get ‘em next year!

Jalapeńo brats -- from Longhorn grass-fed natural beef
Just wanted
to report that the jalapeno brats I had today were excellent. I had only
intended to eat one but had to have a second because the first one was so
good!!!! Very flavorful and lean. I had the first one plain and the second
with yellow mustard (my favorite).
I may have
broken the cooking rules by boiling them because they were frozen. I saw
they were hickory smoked and because they were frozen like a rock I
figured I would not lose anything in boiling water, plus the boiling water
took them from frozen to ready to eat much quicker than waiting for them
to thaw. Hope to make the next batch the recommended way (which I’m
guessing is not boiling).

favorite Chuck Roast story -- Longhorn Grass fed natural beef
A customer approached our
Taos Farmers Market stand and asked if we had any chuck roasts. He said
they had purchased three lately, from other sources that were really
supposed to be great. However, after his wife slow cooked them, he could
bounce them across the front lawn. We told him that if he could bounce
our LeanAndTender™
Chuck Roast across the front lawn we would give him his money back.
Fair enough, he
said and purchased one.
Two weeks
later, we saw him and his wife approaching our stand again. We asked him
if he came to get his money back. He said no -- I came to buy another
chuck roast! (And, he is still ordering our Longhorn Chuck Roasts.)

the beef sticks yesterday...good, but could use some more “zip” to suit my
preference for hot and spicy. My wife had one too, and liked it (meaning
not too spicy for her). The jerky package had 11 inside. Thanks...I do
enjoy those immensely. Keep up the great products and service...says
volumes about your business ethic and integrity. I remain a very
