Why
Longhorn Beef?
With most other types of cattle, the butcher has to ‘try’ and trim the fat
off.
Longhorn cattle are "naturally lean" (no fat to cut
off).

Longhorn
History:
Long horned cattle originally came from Spain around 1493; afterward, they
“blended” with other European and Asian cattle. Then in the
"Old West" around 1864, while cowboys were off fighting the Civil War, the
American Longhorns had to fend for themselves on the open range and
"survival of the fittest" was nature's way, they became naturally hardy
and lean.
However,
other cattle breeds demonstrated a trait more highly valued by the
ranching industry, the ability to put on weight quickly, so Longhorn
numbers dwindled. In
1927,
the breed was saved from almost certain extinction at the Wichita
Mountains Wildlife Refuge in Oklahoma. Longhorns are the only
breed of cattle to evolve without human management.
Most
other cattle breeds are engineered to be fat. Then they are sold on
the hoof by the pound, so it pays to fatten them up by force feeding grain
in a feedlot for 90 days or more. Then the butcher tries to create
lean meat by trimming off the fat. Longhorn cattle are lean by their
nature, and we do not send them to a feedlot or force feed them grain.
